The Best Sweet Potato Pie

  • 1.5 pound Sweet Potato 2 medium potatoes
  • 1 9 inch Pie Crust unbaked
  • 1/2 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 2 Eggs room temp
  • 1/2 cup Evaporated Milk
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 teaspoon Ground Cinnamon
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
  • 1/3 cup Butter softened
  1. Heat oven to 400°F. Place sweet potatoes on cookie sheet. Roast 1 hour until tender. Cut potatoes in half. Scoop out contents into bowl; discard skins. Reduce oven temperature to 350°F.

  2. Place pie crust in 9-inch pie plate. Beat sweet potato contents with electric mixer on medium speed until creamy. Add remaining ingredients; beat 1 minute or until well blended. Pour filling into crust-lined plate.

  3. Bake for 1 hour or until knife inserted near center comes out clean. Cool on counter for 30 minutes then store in fridge for 3 hours to completely set the filling. Enjoy!
